Cream Cheese & Spinach Stuffed Salmon
Ingredients:
> Salmon Fillets
> Cream Cheese
> Spinach
> Garlic
> Parmesan flakes
Method:
> Chop half a bulb of garlic and add to hot pan & fry
> Grate Pepper & Salt over the fillets
> Sear both sides of the Salmon in a hot pan with a fair amount of oil
> Remove from pan
> Cut Salmon Fillets through the middle (this is to create the pocket for the Cream Cheese & Spinach Mixture)
> Add Cream Cheese/ Wilted Spinach & Fried Garlic to a bowl
> Salt & Pepper to taste
> Stuff mixture inside salmon fillets
> Place under a grill until the top parts of the Fillets are golden brown and the middle parts have been cooked through
Serve with Sauteed Baby Potatoes (or Boiled) & Asparagus
Vegan Mango & Pineapple Smoothy >
Ingredients:
- 1/2 cup frozen mango
- 1/2 cup of plant based milk
- 1/2 cup frozen pineapple
- 1/2 cup vanilla greek style alpro yogurt
- 1/2 Tsp of brown sugar
- 1/2 Tbsp of Alpro or Vegan Cream
Serving Garnishes:
- coconut flakes
- 1 maraschino cherry
Preparation:
Combine all ingredients in a large blender and blend until smooth.Top with a cherry and coconut flakes before serving.
Serve immediately and enjoy!
