Sticky Soy Salmon with Broccoli & Lime Rice
Seafood > 4 6-ounce skinless center-cut salmon, skinless center-cut fillets
Fresh Produce > 1 bunch Broccolini / 1 Cilantro, leaves/
2 cloves Garlic / 1 tsp Ginger / 1 Lime, Zest of + 1/2 lime, Juice
Pasta & Grains > 1 cup Jasmine rice
Oils & Vinegar > 1 tbsp Rice wine vinegar + 1 tbsp Vegetable oil
Condiments > 1/3 cup Honey + 1/3 cup Soy sauce
Step 1 > Add crushed Garlic/ Ginger/ RW Vinegar/ Honey/ Soy & Oil to a bowl a mix together to make the Salmon Marinade
Step 2 > Cover the Salmon Fillets in the marinade and cover (place in the fridge for at least 1 hour).
Step 3 > Put the Jasmine Rice on Boil
Step 4 > Preparing the Broccoli:
While the Jasmine Rice is cooking > Boil the Broccoli Florets (until al dente)/ Place in a drainer and make sure all liquid has been drained out/ place in a food processor on high until the Broccoli is cut into very small chunks
Step 5 > After the Salmon has been well marinated; place in the oven for around 20 mins in a Foil Parcel on a Baking Tray
Step 6 > Once the Salmon Fillets have been cooked through; remove from oven and Fry them with a little brown sugar sprinkled on top; on high-heat to crisp them up.
Step 7 > Add the Juice & the Zest of the Lime into the Rice/ Toss; until it is all evenly distributed.
