SWEET POTATO CHILLI
Ingredients >
2 large sweet potatoes, cut into 1-inch cubes
1 (28 ounce) can crushed tomatoes
1 (14 ounce) can diced tomatoes
1 (15 ounce) can kidney beans
1 (15 ounce) can black beans
1 onion, chopped
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon brown sugar
2 cloves garlic, minced
2 teaspoons smoked paprika
½ teaspoon salt

Step 1 >
Combine sweet potatoes, crushed tomatoes, diced tomatoes, kidney beans, black beans, onion, chili powder, cumin, brown sugar, garlic, paprika, and salt in a slow cooker.
Step 2 > Cook on Low for a few hours.
Potato & Green Bean Salad >
Ingredients:
- 2 cups cherry tomatoes
- 1/2 cup dill, chopped
- 1 clove garlic
- 3/4 pound green beans
- Kosher salt
- 1/4 cup Olive oil
- 1/2 cup parsley, chopped
- 1 red onion, sliced
- 2 pounds red and white potatoes, chopped into 1 inch cubes
Preparation
Boil potatoes in salted water approximately 10-15 mins/ until fairly soft (but not mushy) . While potatoes boil: roast tomatoes & red onion in oven until onions soften & the tomatoes begin to burst, (roast for approximately 20-25 mins). When potatoes are ready: drain out the water and place in a large bowl.
> Drop the green beans into the hot potato water and cook until bright green and firm (for approximately 5 mins).
> Add to the bowl with potatoes.
> Once tomatoes & onions are done; stir into the green beans & potatoes.
> Add garlic & herbs.
> Just before serving: douse with olive oil and salt & pepper to taste.
